This is one of the most important design features of any kitchen and should be really decorative and fit in with the theme of the room. There are so many different colors, styles and materials to choose from that you will certainly not be left without enough options. Make sure that you choose your countertop material before trying to decide on a backsplash. This is for a few reasons including that countertops cost more.
It is better to invest your money in the countertops of your choice and then find a backsplash that works with them. It can be a bit overwhelming with all the options you have available to you but you can find something nice. You can look through some design books and see what you find there or maybe you already have your design in mind. There is not usually a ton of room between the countertops and cupboards so you will not have a lot of space to work with in terms of height.
Some people choose to have their backsplash cover the entire length of a wall while others prefer to keep it shorter. Some people opt to only have the backsplash behind the area of the sink and then it cuts off on each side after that. You will need to sort out the electrical outlet issue if you choose to have a longer running backsplash. Figure out whether there is a way to incorporate them into your design or if you would prefer to just get rid of them.
If you think that there is just no way to keep them in it is not that expensive to get them taken out. Color is so important in a kitchen and you want to keep everything clean and minimal looking. Make it a space that you will enjoy being in and bringing your guests to for eating and entertainment purposes. The backsplash is a major part of any kitchen and once you have that done the hard part is over.
